Introducing our New Head Chef and 2022 Winter Menu
As the vines begin to take on hues of burnt reds, oranges and browns, we too usher in a new season at our Tasting Room. We welcome Johann Roux to our team as Head Chef. Chef Johann is passionate about food and comes with approximately 20 years of experience in the hospitality industry. He has been privileged to have catered for many influential people such as the Mazzotti family, Tim Noakes and Wilbur Smith to name a few.
Johann says, “My role at Constantia Glen is to introduce new flavours and textures to the menu by infusing our wines into our menu. As the Head Chef, I take full responsibility and control of the kitchen and the food in its entirety. I believe that one should never be faster than one’s shadow and one needs to work smarter and not harder. I enjoy keeping up with new flavours, cooking techniques and staying up to date with trending chefs. In my spare time, I enjoy tasting different craft beers.”
For the winter months, we are introducing hearty dishes, which we hope will keep you returning to the tasting room on those cold, wet days. A few of these dishes include the new plating of the Beef Fillet on a potato rosti with a delicious red wine jus, and a mouth-watering Pasta with fresh truffle, wild mushrooms, and a gorgonzola & coconut cream sauce. Other popular options returning this winter include the lamb shank with mashed potato and our renowned trio of soups.
One more exciting little secret we can no longer keep is our exclusive 5 Course Dinners hosted by our Winemaker and Head Chef in July. Bookings will open this June, on a first come, first served basis exclusively for our Wine Club and Newsletter subscribers. So keep an eye out for when bookings open!
